Ingredients

  • 46 cups fresh or frozen fruit (600700 g)
  • 46 Tbsp honey (or sugar, agave nectar, or sugar substitute)
  • 4 Tbsp lemon juice (60 mL)

Instructions

  1. Prep the Fruit: Start by washing, peeling, and chopping your fruit if needed. If using frozen fruit, just toss it in your blender! Blend until smooth.
  2. Sweeten and Balance: Add honey (or sugar substitute) and lemon juice to the fruit purée. Blend again until fully combined.
  3. Cook It Down: Pour the mixture into a saucepan and simmer over low heat for 15–20 minutes, stirring frequently until thickened.
  4. Spread and Bake: Line 2 baking sheets with parchment paper. Spread the fruit mixture evenly on each sheet, about 1/8-inch thick.
  5. Dry it Out: Bake in the oven at 170°F (75°C) for 4–6 hours, or until non-sticky.
  6. Cool and Roll: Let cool completely, then cut into strips and roll them with parchment.
