Description
A flavorful Afghani omelette that comes together in about 20 minutes, perfect for breakfast or dinner.
Ingredients

- 4 eggs
- 2 fresh tomatoes, chopped
- 1 onion, finely chopped
- 2 green chilies, chopped
- 1 tsp cumin
- 1 tsp coriander
- Salt, to taste
- Pepper, to taste
- Oil or butter for cooking
Instructions
- Heat your oil or butter in a frying pan over medium heat for about 1 minute.
- Sauté the onions and green chilies until the onions are translucent, about 5 minutes.
- Add the chopped tomatoes and cook down until soft, around 2-3 minutes.
- Beat the eggs with cumin, coriander, salt, and pepper in a bowl until blended.
- Pour the egg mixture into the pan over the sautéed vegetables.
- Cook until the edges start to set, then cover with a lid and let cook for 5-7 minutes until fully set.
- Serve hot, optionally with fresh herbs sprinkled on top.
