Description

A flavorful Afghani omelette that comes together in about 20 minutes, perfect for breakfast or dinner.


Ingredients

Scale
  • 4 eggs
  • 2 fresh tomatoes, chopped
  • 1 onion, finely chopped
  • 2 green chilies, chopped
  • 1 tsp cumin
  • 1 tsp coriander
  • Salt, to taste
  • Pepper, to taste
  • Oil or butter for cooking

Instructions

  1. Heat your oil or butter in a frying pan over medium heat for about 1 minute.
  2. Sauté the onions and green chilies until the onions are translucent, about 5 minutes.
  3. Add the chopped tomatoes and cook down until soft, around 2-3 minutes.
  4. Beat the eggs with cumin, coriander, salt, and pepper in a bowl until blended.
  5. Pour the egg mixture into the pan over the sautéed vegetables.
  6. Cook until the edges start to set, then cover with a lid and let cook for 5-7 minutes until fully set.
  7. Serve hot, optionally with fresh herbs sprinkled on top.
