Description

A quick and easy one-pot Mexican rice dish that is flavorful and perfect for weeknight dinners.


Ingredients

  • 2 cups long grain white rice
  • 2 tablespoons butter
  • 1 tablespoon minced garlic
  • 4 cups water (or chicken/vegetable broth)
  • 2 tablespoons tomato paste
  • 1 tablespoon Knorr Chicken Bouillon Powder

Instructions

  1. Rinse the rice in a fine-mesh strainer under cold water until the water runs clear. Set aside.
  2. In a large skillet over medium heat, melt the butter until bubbly.
  3. Add the minced garlic and sauté for about 3 minutes until fragrant and starting to turn golden.
  4. Add the rinsed rice to the skillet, stirring to coat with the butter and garlic. Cook for about 10 minutes until lightly toasted.
  5. In a bowl, whisk together the water, tomato paste, and chicken bouillon powder until smooth.
  6. Pour the liquid mixture over the toasted rice, stir well to combine.
  7. Bring to a boil, then reduce heat to a gentle simmer. Cover and cook for 25-30 minutes, until all liquid is absorbed.
  8. Fluff the rice with a fork and serve immediately.

Notes

This dish can be customized with leftover vegetables, beans, or proteins.
