Description

A creamy, delicious salad made with avocado and shredded chicken, perfect for busy families.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 ripe avocado, mashed
  • 1/2 cup diced bell peppers
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Grab your cooked chicken and shred it into bite-sized pieces.
  2. Next, mash your ripe avocado in a bowl using a fork until it’s creamy but still has some small chunks.
  3. In a large mixing bowl, combine the shredded chicken, mashed avocado, diced bell peppers, diced red onion, and chopped cilantro.
  4. Stir it all together gently until everything is well mixed.
  5. Drizzle in the lime juice, and add salt and pepper.
  6. Give it a good mix again and voila! You’re done!
  7. You can enjoy this salad on its own, in a wrap, or on top of a bed of mixed greens.
