- 2 cups cooked chicken, shredded
- 1 ripe avocado, mashed
- 1/2 cup diced bell peppers
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Grab your cooked chicken and shred it into bite-sized pieces.
- Next, mash your ripe avocado in a bowl using a fork until it’s creamy but still has some small chunks.
- In a large mixing bowl, combine the shredded chicken, mashed avocado, diced bell peppers, diced red onion, and chopped cilantro.
- Stir it all together gently until everything is well mixed.
- Drizzle in the lime juice, and add salt and pepper.
- Give it a good mix again and voila! You’re done!
- You can enjoy this salad on its own, in a wrap, or on top of a bed of mixed greens.
