Ingredients

- 1 teaspoon butter
- 2 large eggs
- 2 slices of multigrain bread
- 1 ripe avocado
- 1 teaspoon lemon juice
- 1 pinch cayenne pepper
- Sea salt, to taste
- Ground black pepper, to taste
Instructions
- Melt the butter in a skillet over medium-low heat for about 1-2 minutes.
- Crack the eggs into the skillet and cook until the whites are set, around 2-3 minutes.
- Flip the eggs and cook to desired doneness, about 2-5 minutes more.
- Toast the multigrain bread until golden brown.
- Mash the avocado in a small bowl with lemon juice, cayenne pepper, and season with sea salt.
- Spread the avocado mixture on the toasted bread, top with a fried egg, and sprinkle with black pepper.
Notes
Can customize toppings with other vegetables or flavors. Best served fresh but can store leftover avocado for up to 3 days.
