Description

A creamy and delicious avocado toast topped with fried eggs, ready in under 15 minutes.


Ingredients

Scale
  • 1 teaspoon butter
  • 2 large eggs
  • 2 slices of multigrain bread
  • 1 ripe avocado
  • 1 teaspoon lemon juice
  • 1 pinch cayenne pepper
  • Sea salt, to taste
  • Ground black pepper, to taste

Instructions

  1. Melt the butter in a skillet over medium-low heat for about 1-2 minutes.
  2. Crack the eggs into the skillet and cook until the whites are set, around 2-3 minutes.
  3. Flip the eggs and cook to desired doneness, about 2-5 minutes more.
  4. Toast the multigrain bread until golden brown.
  5. Mash the avocado in a small bowl with lemon juice, cayenne pepper, and season with sea salt.
  6. Spread the avocado mixture on the toasted bread, top with a fried egg, and sprinkle with black pepper.

Notes

Can customize toppings with other vegetables or flavors. Best served fresh but can store leftover avocado for up to 3 days.
