This delicious Bacon Cheddar Gnocchi Soup comes together in 30 minutes! A quick and easy weeknight meal your family will love.


Ingredients

  • 8 slices thick-cut bacon
  • 2 tablespoons unsalted butter or olive oil
  • 1 large onion, diced
  • 2 large carrots, peeled and sliced
  • 4 cups chicken broth (or vegetable broth for a vegetarian option)
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder (or 4 cloves minced garlic)
  • 1/4 teaspoon dried thyme
  • 1 teaspoon red chili flakes (adjust to taste)
  • 16 ounces gnocchi
  • 2 cups heavy cream or half-and-half
  • 2 cups shredded cheddar cheese

Instructions

  1. Fry bacon in a large pot over medium heat until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate and chop into pieces.
  2. Add the butter (or olive oil) to the pot. Once melted, sauté the diced onions and sliced carrots until soft and translucent, around 10-15 minutes.
  3. Pour in the chicken broth and stir. Bring to a simmer, then reduce heat and simmer for about 5 minutes.
  4. Stir in heavy cream or half-and-half, then season with salt, pepper, garlic powder, thyme, and red chili flakes. Let this simmer for about 5 minutes.
  5. Add shredded cheddar cheese and stir until melted.
  6. Stir in the gnocchi and cook for an additional 2 minutes.
  7. Mix in crispy bacon pieces before serving. Top with additional bacon if desired.

Notes

This soup is customizable, feel free to add any leftover veggies you have on hand.
