Description

A quick and easy breakfast recipe that comes together in about 30 minutes, packed with flavor and customizable fillings.


Ingredients

  • 6 small corn tortillas
  • 4 large eggs
  • 1 cup cooked and crumbled breakfast sausage or bacon
  • 1 cup shredded cheese (Cheddar, Monterey Jack, or Pepper Jack)
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • Salt and pepper to taste
  • Optional toppings: salsa, avocado, sour cream

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add a splash of oil and sauté the diced bell peppers and onions until softened (about 5 minutes).
  3. In a large mixing bowl, whisk together the eggs with a couple pinches of salt and pepper.
  4. Add the cooked sausage or bacon and sautéed vegetables to the eggs and stir until well combined.
  5. Lightly grease a baking dish and arrange the corn tortillas inside, forming cups.
  6. Spoon in the egg mixture into each tortilla and top with shredded cheese.
  7. Bake in the preheated oven for about 15-20 minutes, until the eggs are cooked and the cheese is melted and bubbly.
  8. Serve warm with your favorite toppings.
