- 6 small corn tortillas
- 4 large eggs
- 1 cup cooked and crumbled breakfast sausage or bacon
- 1 cup shredded cheese (Cheddar, Monterey Jack, or Pepper Jack)
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- Salt and pepper to taste
- Optional toppings: salsa, avocado, sour cream
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add a splash of oil and sauté the diced bell peppers and onions until softened (about 5 minutes).
- In a large mixing bowl, whisk together the eggs with a couple pinches of salt and pepper.
- Add the cooked sausage or bacon and sautéed vegetables to the eggs and stir until well combined.
- Lightly grease a baking dish and arrange the corn tortillas inside, forming cups.
- Spoon in the egg mixture into each tortilla and top with shredded cheese.
- Bake in the preheated oven for about 15-20 minutes, until the eggs are cooked and the cheese is melted and bubbly.
- Serve warm with your favorite toppings.
