- 2 medium potatoes, thinly sliced
- 1 cup of milk
- 1 cup of shredded cheese (cheddar, Swiss, or mozzarella)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon olive oil
- Chopped herbs for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Arrange the sliced potatoes in an even layer in a baking dish. Drizzle with olive oil and season with salt and pepper.
- In a bowl, whisk together the eggs and milk until combined.
- Pour the egg mixture over the potatoes, ensuring it seeps down through the layers.
- Sprinkle cheese on top of the egg mixture.
- Bake for 25-30 minutes, or until the eggs are set and golden, starting to check at 20 minutes.
- Let cool slightly, garnish with chopped herbs, slice, and serve warm.
