Description

A delightful Baked Eggs Napoleon that comes together in about 30 minutes, baked in one dish for a quick and easy weeknight meal.


Ingredients

Scale
  • 4 large eggs
  • 2 medium potatoes, thinly sliced
  • 1 cup of milk
  • 1 cup of shredded cheese (cheddar, Swiss, or mozzarella)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil
  • Chopped herbs for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Arrange the sliced potatoes in an even layer in a baking dish. Drizzle with olive oil and season with salt and pepper.
  3. In a bowl, whisk together the eggs and milk until combined.
  4. Pour the egg mixture over the potatoes, ensuring it seeps down through the layers.
  5. Sprinkle cheese on top of the egg mixture.
  6. Bake for 25-30 minutes, or until the eggs are set and golden, starting to check at 20 minutes.
  7. Let cool slightly, garnish with chopped herbs, slice, and serve warm.
