- 8 pieces rice paper wrappers
- 2 cups cooked shredded chicken breast
- 1 cup shredded carrots
- 1 whole cucumber, julienned
- 8 leaves lettuce (romaine or butter)
- ½ cup plain Greek yogurt
- 1 tablespoon light mayonnaise
- 1 tablespoon sweet chili sauce
- 1 teaspoon Sriracha (optional)
- 1 teaspoon honey
- 1 pinch salt
- ½ teaspoon rice vinegar
- 1 tablespoon sesame seeds
Instructions
- Soften the rice paper: Fill a shallow dish with warm water and dip one wrapper for 15-20 seconds until pliable.
- Assemble your rolls: Lay a lettuce leaf in the center of the softened wrapper, add chicken, cucumber, and carrots.
- Add the sauce: Drizzle creamy sauce over the filling.
- Roll it up: Fold the sides inward and roll from the bottom up snugly.
- Repeat with remaining wrappers and filling.
- Serve with extra sauce and sprinkle with sesame seeds.
