Description

Delicious and refreshing Bang Bang Chicken Rice Paper Rolls, ready in 30 minutes and perfect for a fun family meal.


Ingredients

  • 8 pieces rice paper wrappers
  • 2 cups cooked shredded chicken breast
  • 1 cup shredded carrots
  • 1 whole cucumber, julienned
  • 8 leaves lettuce (romaine or butter)
  • ½ cup plain Greek yogurt
  • 1 tablespoon light mayonnaise
  • 1 tablespoon sweet chili sauce
  • 1 teaspoon Sriracha (optional)
  • 1 teaspoon honey
  • 1 pinch salt
  • ½ teaspoon rice vinegar
  • 1 tablespoon sesame seeds

Instructions

  1. Soften the rice paper: Fill a shallow dish with warm water and dip one wrapper for 15-20 seconds until pliable.
  2. Assemble your rolls: Lay a lettuce leaf in the center of the softened wrapper, add chicken, cucumber, and carrots.
  3. Add the sauce: Drizzle creamy sauce over the filling.
  4. Roll it up: Fold the sides inward and roll from the bottom up snugly.
  5. Repeat with remaining wrappers and filling.
  6. Serve with extra sauce and sprinkle with sesame seeds.

Notes
