- 2 lbs Potatoes (Yukon Gold or baby potatoes)
- ¾ tsp Onion Powder
- ¼ tsp Garlic Powder
- ½ tsp Salt (adjust to taste)
- ¼ tsp Black Pepper
- ½ tsp Paprika
- 2 Tbsp Olive Oil
- 1 tsp Minced Garlic
- ¼ tsp Cayenne Pepper (adjust for heat)
- ½ cup Cilantro, chopped (or parsley)
- 1 tsp Lemon Juice
Instructions
- Wash and peel the potatoes, then cut into bite-sized cubes (about 1 inch thick).
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic to the hot oil and sauté until fragrant (about 1 minute).
- Stir in onion powder, cayenne, and paprika.
- Add potatoes, sprinkle with salt and black pepper, and cook for 15-20 minutes, stirring occasionally.
- Once potatoes are tender and golden, stir in chopped cilantro and lemon juice.
- Serve hot with optional lemon wedges on the side.
Notes
These potatoes can store in the fridge for 3-5 days in an airtight container. Best enjoyed fresh.
