Description

A hearty and soul-soothing beef stew that comes together in one pot, perfect for family dinners during chilly months.

Ingredients

Scale
  • 1 lb Beef Stew Meat
  • 2 cups Beef Broth (low-sodium)
  • 1 cup Red Wine
  • 3 Carrots (sliced into coins)
  • 2 Potatoes (cubed, skins on)
  • 1 Onion (chopped)
  • 2 Cloves Garlic (minced)
  • 2 tbsp Tomato Paste
  • 1 tsp Dried Thyme
  • 1 Bay Leaf
  • Salt and Pepper (to taste)
  • 4 Hollowed-out Bread Bowls (optional for serving)

Instructions

  1. In a large pot, heat over medium heat. Toss in your beef stew meat to brown on all sides for about 6-8 minutes.
  2. Add the chopped onion and minced garlic to the pot. Cook, stirring occasionally, until the onion becomes translucent, about 3 minutes.
  3. Stir in the tomato paste, dried thyme, and bay leaf. Let it bloom for about 30 seconds.
  4. Pour in the red wine, scraping the bottom of the pot. Allow it to bubble for about 2 minutes.
  5. Pour in the beef broth, and toss in the carrots and potatoes. Bring to a boil, then reduce heat and let it simmer gently for 90 minutes.
  6. Season with salt and pepper to taste. Remove the bay leaf and serve in bowls or hollowed-out bread bowls.

Notes

Feel free to customize with any leftover veggies or different kinds of meat.

This stew is versatile and budget-friendly.
