- 1 lb Beef Stew Meat
- 2 cups Beef Broth (low-sodium)
- 1 cup Red Wine
- 3 Carrots (sliced into coins)
- 2 Potatoes (cubed, skins on)
- 1 Onion (chopped)
- 2 Cloves Garlic (minced)
- 2 tbsp Tomato Paste
- 1 tsp Dried Thyme
- 1 Bay Leaf
- Salt and Pepper (to taste)
- 4 Hollowed-out Bread Bowls (optional for serving)
Instructions
- In a large pot, heat over medium heat. Toss in your beef stew meat to brown on all sides for about 6-8 minutes.
- Add the chopped onion and minced garlic to the pot. Cook, stirring occasionally, until the onion becomes translucent, about 3 minutes.
- Stir in the tomato paste, dried thyme, and bay leaf. Let it bloom for about 30 seconds.
- Pour in the red wine, scraping the bottom of the pot. Allow it to bubble for about 2 minutes.
- Pour in the beef broth, and toss in the carrots and potatoes. Bring to a boil, then reduce heat and let it simmer gently for 90 minutes.
- Season with salt and pepper to taste. Remove the bay leaf and serve in bowls or hollowed-out bread bowls.
