Description

A quick, one-pot meal that’s perfect for weeknight dinners, combining black beans, rice, and sausage for a delicious and comforting dish.


Ingredients

  • 1 cup black beans (cooked or canned, drained and rinsed)
  • 1 cup rice (white or brown)
  • 12 sausages (sliced; chorizo, kielbasa, or chicken sausage)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups vegetable or chicken broth
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large pot, heat a splash of oil over medium heat.
  2. Add the chopped onion and sausage slices, sautéing for about 5 minutes until the onion is translucent and the sausage is lightly browned.
  3. Stir in minced garlic, cumin, smoked paprika, and season with salt and pepper. Cook for another minute until fragrant.
  4. Toss in the rice, stirring for about a minute to toast it slightly.
  5. Pour in the broth, stir well, bring to a boil, then reduce heat and cover. Simmer for 15-20 minutes until the rice is fluffy.
  6. Stir in the black beans and let heat through for a couple of minutes.
  7. Serve hot, garnished with fresh cilantro if desired.

Notes

Feel free to customize with your favorite veggies or leftover ingredients. This dish can be stored in the refrigerator for up to 4 days and is also freezer-friendly, lasting up to 3 months.
