Description

A delicious and easy French toast casserole made with blueberries, perfect for brunch.


Ingredients

  • 1 loaf of bread (French or challah, preferably stale)
  • 2 cups of fresh blueberries
  • 6 large eggs
  • 2 cups of milk (whole, skim, or plant-based)
  • 1/2 cup of sugar
  • 1 tablespoon of vanilla extract
  • 1 teaspoon of ground cinnamon
  • 1/4 teaspoon of salt
  • Butter for greasing your baking dish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease your baking dish generously with butter.
  3. Cut the bread into 1-inch cubes and place them in the prepared baking dish.
  4. Sprinkle the blueberries evenly over the bread.
  5. In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, ground cinnamon, and salt until creamy.
  6. Pour the mixture evenly over the bread and blueberries.
  7. Let it sit for about 15 minutes to absorb the mixture.
  8. Bake for 35-40 minutes, or until the top is golden brown and set.
  9. Serve warm, optionally dusted with powdered sugar or drizzled with maple syrup.

Notes

This casserole can be served with crispy bacon or sausage and can be stored in the refrigerator for about 3-4 days.
