Description

A delicious no-bake snack made with Greek yogurt and topped with a blueberry compote, ready in just 15 minutes!


Ingredients

Scale
  • 1 cup Greek yogurt
  • 1/2 cup blueberries
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • 1 tsp cornstarch (optional)

Instructions

  1. Prepare the Blueberry Compote: In a small saucepan, combine the blueberries, honey, and lemon juice over medium heat. Cook for about 5 minutes, stirring occasionally, until the blueberries soften. If using cornstarch, dissolve it in water and mix it in to thicken. Cook for another minute and let cool.
  2. Make the Yogurt Base: In a mixing bowl, combine Greek yogurt and vanilla extract. Mix until smooth and creamy.
  3. Assemble the Bites: Spoon the yogurt mixture into silicone molds, filling them three-quarters full.
  4. Swirl in the Blueberries: Add a spoonful of cooled blueberry compote on top of each yogurt portion and swirl gently with a toothpick.
  5. Freeze It Up: Place molds in the freezer for at least 3 hours until solid.
  6. Enjoy: Remove the yogurt bites from the molds and let sit for 2-3 minutes at room temperature before enjoying.

Notes

These yogurt bites can be customized with seasonal fruits and are great for meal prep. Store extras in an airtight container in the freezer for up to 3 months.
