Description

A quick and easy crispy rice recipe that your family will love, combining textures and flavors for the ultimate comfort food.


Ingredients

Scale
  • ½ cup thinly sliced scallions
  • 2 cups Carolina long-grain rice
  • Salt and pepper to taste
  • ¼ cup canola oil
  • 1 cup full-fat, unsweetened canned coconut milk

Instructions

  1. In a medium saucepan, combine the coconut milk, 2 teaspoons of salt, a couple pinches of pepper, and 1 cup of water. Bring to a boil over high heat.
  2. Stir in the rice and let it return to a boil. Lower the heat to medium-low, cover, and cook for approximately 18 minutes, until liquid is fully absorbed.
  3. Remove from heat, let sit covered for another 5 minutes, then fluff the rice with a fork.
  4. Spread rice on a large baking sheet and cool for about 30 minutes.
  5. When ready, mix rice with scallions in a bowl. Heat oil in a skillet over high heat. Add rice and press down into an even layer.
  6. Cook undisturbed until golden brown and crispy, about 5 minutes.
  7. Flip the rice, press down again, and cook for another 5 minutes until the other side is crispy.
  8. Transfer to a serving platter, garnish with additional scallions, and enjoy!

Notes

This recipe is versatile—feel free to swap out scallions or mix in leftover proteins and veggies. Store in the fridge for up to 4 days.
