Description

A quick and easy One Pan Boursin Chicken Risotto that comes together in about 30 minutes and serves as a comforting family meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup Arborio rice
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 4 cups low-sodium chicken broth
  • 1 cup milk
  • 5 oz Garlic Herb Boursin cheese
  • Fresh parsley for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large, oven-safe skillet, combine the chopped chicken, Arborio rice, minced garlic, diced onion, chicken broth, and milk. Stir until well mixed and bring to a gentle boil.
  3. Once it starts bubbling, cover the skillet and bake for about 18-20 minutes until the chicken is cooked through and the rice is creamy.
  4. Carefully remove the skillet from the oven and stir in the Boursin cheese until melted and creamy.
  5. Serve warm, garnished with fresh parsley.
