- 2 boneless, skinless chicken breasts
- 1 cup Arborio rice
- 2 cloves garlic, minced
- 1 onion, diced
- 4 cups low-sodium chicken broth
- 1 cup milk
- 5 oz Garlic Herb Boursin cheese
- Fresh parsley for garnish
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large, oven-safe skillet, combine the chopped chicken, Arborio rice, minced garlic, diced onion, chicken broth, and milk. Stir until well mixed and bring to a gentle boil.
- Once it starts bubbling, cover the skillet and bake for about 18-20 minutes until the chicken is cooked through and the rice is creamy.
- Carefully remove the skillet from the oven and stir in the Boursin cheese until melted and creamy.
- Serve warm, garnished with fresh parsley.
