Description
A delicious weeknight dinner featuring chicken breasts stuffed with creamy Boursin cheese and spinach, quickly cooked in a skillet and baked to perfection.

- 4 boneless, skinless chicken breasts
- 4 oz Boursin cheese
- 1 cup spinach, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- 1/2 cup breadcrumbs (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Mix the Boursin cheese, chopped spinach, and minced garlic in a bowl.
- Prepare each chicken breast by slicing horizontally to create a pocket.
- Stuff each pocket with the cheese mixture, packing it in well.
- Season the outside of the chicken with salt and pepper.
- Sear the chicken in olive oil over medium-high heat for about 3-4 minutes on each side.
- Bake in a baking dish for 20-25 minutes or until cooked through (internal temperature of 165°F).
- Let the chicken rest for a few minutes before slicing.
- Serve with veggies or grains and enjoy!

Feel free to customize the filling based on leftovers or preferences. Excellent served with a balsamic reduction or fresh salsa.
