Description

A delicious weeknight dinner featuring chicken breasts stuffed with creamy Boursin cheese and spinach, quickly cooked in a skillet and baked to perfection.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 4 oz Boursin cheese
  • 1 cup spinach, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix the Boursin cheese, chopped spinach, and minced garlic in a bowl.
  3. Prepare each chicken breast by slicing horizontally to create a pocket.
  4. Stuff each pocket with the cheese mixture, packing it in well.
  5. Season the outside of the chicken with salt and pepper.
  6. Sear the chicken in olive oil over medium-high heat for about 3-4 minutes on each side.
  7. Bake in a baking dish for 20-25 minutes or until cooked through (internal temperature of 165°F).
  8. Let the chicken rest for a few minutes before slicing.
  9. Serve with veggies or grains and enjoy!
