Description

Make-ahead breakfast burritos with 22+ grams of protein perfect for meal prep. 1 hour of Sunday prep creates 2 weeks of grab-and-go morning meals that beat any drive-through.


Ingredients

  • 16 large eggs, scrambled
  • 1 can black beans, drained and rinsed
  • 2 cups shredded Mexican cheese blend
  • 8 large whole wheat or protein tortillas
  • 2 bell peppers, diced
  • 1 large onion, diced
  • 2 cups fresh spinach
  • 1 cup prepared salsa
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  • Prep vegetables: Sauté onions and peppers until softened, add spinach until wilted
  • Scramble eggs in batches, keeping them slightly underdone (they’ll finish cooking when reheated)
  • Warm tortillas in microwave for 30 seconds to make them pliable
  • Assembly line setup: Lay out tortillas, portion fillings into bowls
  • Fill each tortilla: 2 scoops eggs, 1/4 cup beans, vegetables, cheese, 2 tbsp salsa
  • Wrap tightly: Fold bottom up, fold sides in, roll firmly
  • Cool completely before wrapping individually in foil or plastic
  • Freeze flat on baking sheet, then transfer to freezer bags
