Description

A cozy family comfort soup that is creamy, cheesy, and perfect for a quick weeknight dinner.


Ingredients

  • 4 cups broccoli florets
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions

  1. Melt 4 tablespoons of butter in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook until fragrant, about 1 minute.
  2. Add the broccoli florets and vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes until broccoli is tender.
  3. Using an immersion blender, puree the soup to your desired consistency.
  4. Reduce heat and stir in heavy cream and shredded cheddar cheese until melted and combined.
  5. Season with salt and pepper to taste. Serve hot and enjoy!
