- 4 cups broccoli florets
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 4 tablespoons unsalted butter
- Salt and pepper to taste
Instructions
- Melt 4 tablespoons of butter in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook until fragrant, about 1 minute.
- Add the broccoli florets and vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes until broccoli is tender.
- Using an immersion blender, puree the soup to your desired consistency.
- Reduce heat and stir in heavy cream and shredded cheddar cheese until melted and combined.
- Season with salt and pepper to taste. Serve hot and enjoy!
Notes
Serve with toasted bread or fresh crackers. This soup can be stored in the refrigerator for about 3-5 days or frozen for up to 3 months.
