Description

A quick and easy side dish featuring sweet roasted carrots enhanced by nutty brown butter and crunchy pecans.


Ingredients

  • 2 pounds carrots, peeled and cut into sticks or rounds
  • 4 tablespoons unsalted butter
  • 1 cup pecans, roughly chopped
  • Salt, to taste
  • Pepper, to taste
  • Fresh herbs (optional, e.g., thyme or parsley)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Melt the butter in a skillet over medium heat until golden brown, about 5-7 minutes.
  3. In a bowl, toss the carrots with the brown butter, salt, and pepper.
  4. Spread the carrots on a baking sheet in a single layer.
  5. Roast in the oven for 20-25 minutes, stirring halfway through.
  6. Add the pecans to the baking sheet during the last 5 minutes of cooking.
  7. Remove from the oven, sprinkle with fresh herbs if desired, and serve warm.
