- 2 pounds carrots, peeled and cut into sticks or rounds
- 4 tablespoons unsalted butter
- 1 cup pecans, roughly chopped
- Salt, to taste
- Pepper, to taste
- Fresh herbs (optional, e.g., thyme or parsley)
Instructions
- Preheat your oven to 425°F (220°C).
- Melt the butter in a skillet over medium heat until golden brown, about 5-7 minutes.
- In a bowl, toss the carrots with the brown butter, salt, and pepper.
- Spread the carrots on a baking sheet in a single layer.
- Roast in the oven for 20-25 minutes, stirring halfway through.
- Add the pecans to the baking sheet during the last 5 minutes of cooking.
- Remove from the oven, sprinkle with fresh herbs if desired, and serve warm.
