A quick and easy one-skillet meal featuring juicy chicken thighs caramelized in brown sugar, perfect for busy weeknights.

- 8 bone-in, skin-on chicken thighs
- 1/4 cup packed dark brown sugar
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tbsp smoked paprika
- 1 tsp onion powder
- 1 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 cup chicken broth or water
- 2 tbsp apple cider vinegar or fresh lemon juice
- Fresh parsley or chives for garnish
Instructions
- Preheat your oven to 400°F (200°C). Pat the chicken thighs dry with paper towels.
- In a small bowl, mix together brown sugar, smoked paprika, onion powder, salt, and black pepper.
- Rub the mixture all over the chicken thighs evenly.
- Heat olive oil in a large, oven-safe skillet over medium-high heat. Place the chicken thighs skin-side down and cook for 6-8 minutes until golden brown.
- Flip the chicken thighs skin-side up, pour chicken broth and apple cider vinegar around them in the pan.
- Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until cooked through at 165°F (74°C).
- Remove from the oven and let the chicken rest for a few minutes. Spoon pan juices over the chicken and garnish with fresh parsley or chives before serving.
Notes
Serve with rice or mashed potatoes and a side of veggies or salad. Store leftovers in an airtight container in the refrigerator for up to 3 days.
