Description

A quick and easy one-skillet meal featuring juicy chicken thighs caramelized in brown sugar, perfect for busy weeknights.


Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 1/4 cup packed dark brown sugar
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tbsp smoked paprika
  • 1 tsp onion powder
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup chicken broth or water
  • 2 tbsp apple cider vinegar or fresh lemon juice
  • Fresh parsley or chives for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Pat the chicken thighs dry with paper towels.
  2. In a small bowl, mix together brown sugar, smoked paprika, onion powder, salt, and black pepper.
  3. Rub the mixture all over the chicken thighs evenly.
  4. Heat olive oil in a large, oven-safe skillet over medium-high heat. Place the chicken thighs skin-side down and cook for 6-8 minutes until golden brown.
  5. Flip the chicken thighs skin-side up, pour chicken broth and apple cider vinegar around them in the pan.
  6. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until cooked through at 165°F (74°C).
  7. Remove from the oven and let the chicken rest for a few minutes. Spoon pan juices over the chicken and garnish with fresh parsley or chives before serving.

Notes

Serve with rice or mashed potatoes and a side of veggies or salad. Store leftovers in an airtight container in the refrigerator for up to 3 days.
