A quick and easy comfort food made with blue potatoes, buttermilk, and ground turkey.
Ingredients

- 2 lbs blue potatoes
- 1/2 cup buttermilk
- 3 tbsp butter
- 1 lb ground turkey
- 3 cloves garlic, minced
- Salt, to taste
- Pepper, to taste
- Chives, for garnish (optional)
Instructions
- Boil a large pot of salted water and add blue potatoes. Boil for 15-20 minutes until tender.
- Drain the potatoes and return them to the pot to evaporate excess moisture.
- Add buttermilk, butter, salt, and pepper to the potatoes; mash to desired consistency.
- In a skillet, heat oil and cook ground turkey over medium heat for 5-7 minutes until browned. Add garlic and cook for an additional 1-2 minutes.
- Mix cooked turkey into the mashed potatoes until combined.
- Serve warm, garnished with chives if desired.
Notes
Feel free to swap ground turkey for beef, chicken, or sautéed veggies for a vegetarian option. Customize with leftover cheeses or vegetables.
