Description

A quick and easy comfort food made with blue potatoes, buttermilk, and ground turkey.


Ingredients

Scale
  • 2 lbs blue potatoes
  • 1/2 cup buttermilk
  • 3 tbsp butter
  • 1 lb ground turkey
  • 3 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • Chives, for garnish (optional)

Instructions

  1. Boil a large pot of salted water and add blue potatoes. Boil for 15-20 minutes until tender.
  2. Drain the potatoes and return them to the pot to evaporate excess moisture.
  3. Add buttermilk, butter, salt, and pepper to the potatoes; mash to desired consistency.
  4. In a skillet, heat oil and cook ground turkey over medium heat for 5-7 minutes until browned. Add garlic and cook for an additional 1-2 minutes.
  5. Mix cooked turkey into the mashed potatoes until combined.
  6. Serve warm, garnished with chives if desired.

Notes

Feel free to swap ground turkey for beef, chicken, or sautéed veggies for a vegetarian option. Customize with leftover cheeses or vegetables.
