Description
A delightful and quick appetizer featuring roasted butternut squash on crusty bread, perfect for family gatherings.
Ingredients
Scale
- 1 large butternut squash, diced into ½ inch cubes
- 2 tablespoons olive oil, plus extra for drizzling
- Salt, to taste
- Freshly cracked black pepper, to taste
- 1/2 baguette, sliced ½ inch thick
- 4 tablespoons unsalted butter
- Fresh herbs (like thyme or basil), for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the squash by tossing it with olive oil, salt, and pepper; spread on a baking sheet and roast for 25-30 minutes until fork-tender.
- In a medium saucepan, melt the butter over medium heat and cook until it turns golden brown and gives off a nutty aroma.
- Once the squash is roasted, combine it with the brown butter in a bowl, being careful not to mash.
- Toast the baguette slices in the oven for 5-7 minutes until crispy and golden.
- Assemble by topping each toasted slice with the butternut squash mixture.
- Garnish with fresh herbs and serve immediately.
Notes
For a twist, add leftover roasted veggies or herbs you have on hand. Best served fresh, as reheating may affect the bread’s texture.
