Ingredients

  • 2 tablespoons olive oil, plus extra for drizzling
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • 1/2 baguette, sliced ½ inch thick
  • 4 tablespoons unsalted butter
  • Fresh herbs (like thyme or basil), for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the squash by tossing it with olive oil, salt, and pepper; spread on a baking sheet and roast for 25-30 minutes until fork-tender.
  3. In a medium saucepan, melt the butter over medium heat and cook until it turns golden brown and gives off a nutty aroma.
  4. Once the squash is roasted, combine it with the brown butter in a bowl, being careful not to mash.
  5. Toast the baguette slices in the oven for 5-7 minutes until crispy and golden.
  6. Assemble by topping each toasted slice with the butternut squash mixture.
  7. Garnish with fresh herbs and serve immediately.
