Description

This delicious Cabbage Soup comes together in about 30 minutes and is made all in one pot for a quick and easy weeknight meal that your family will love!


Ingredients

  • 1 medium head of cabbage, chopped
  • 1 large onion, chopped
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 can diced tomatoes
  • Salt and pepper to taste
  • Optional: shredded chicken, ground beef, or sausage

Instructions

  1. Sauté the veggies: In a large pot, heat a drizzle of olive oil over medium heat. Toss in the chopped onion, diced carrots, and minced garlic. Cook, stirring occasionally, until the onion is translucent and the veggies are tender, about 5-7 minutes.
  2. Add the cabbage: Stir in the chopped cabbage and let it cook down for about 5 minutes.
  3. Pour in the broth and tomatoes: Once the cabbage has shrunk down, add the broth and diced tomatoes. Stir to combine.
  4. Bring to a boil: Turn up the heat until your soup reaches a boil, then reduce it to a simmer for about 30 minutes.
  5. Season well: Sprinkle in a couple pinches of salt and pepper. Taste and adjust as necessary.
  6. Optional protein: If desired, add shredded chicken, ground beef, or sausage during the simmering process.
  7. Serve hot: Ladle the soup into bowls and enjoy!

Notes
