- 1/3 cup unsalted butter
- 1/2 red bell pepper, seeded and diced
- 1/2 green bell pepper, seeded and diced
- 1/2 yellow onion, diced
- 3 1/4 cups low-sodium chicken broth
- 1 1/4 teaspoons Kosher salt
- 1 teaspoon garlic powder
- 1/2 teaspoon ground thyme
- 1 teaspoon ground paprika
- 1/4 teaspoon black pepper
- 1 bay leaf
- 1 1/2 cups long-grain white rice
Instructions
- Melt the butter in a medium-sized saucepan over medium-high heat until smooth.
- Add the diced bell peppers and onion, sauté for 5-7 minutes until softened.
- Pour in the chicken broth and add salt, garlic powder, thyme, paprika, pepper, and bay leaf. Bring to a boil.
- Add the rice, stir, cover with a lid, and reduce heat to maintain a simmer.
- Let it simmer for 20-25 minutes until the rice has absorbed the broth.
- After the rice is tender, turn off heat, let it rest covered for 10 minutes, fluff with a fork, and serve.
Notes
