A cozy and creamy caramelized onion and Gruyere dip, baked to perfection and perfect for parties or family gatherings.

- 1 tablespoon butter
- 2 large yellow onions, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme (optional)
- 8 ounces cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 1/2 cups Gruyere cheese, shredded and divided
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Melt butter in a heavy skillet over medium-low heat. Add sliced onions and a couple pinches of salt. Cook slowly, stirring frequently for 30–40 minutes, until deeply caramelized and golden brown.
- Add minced garlic and thyme to the caramelized onions and cook for an additional 3-5 minutes until fragrant.
- In a mixing bowl, combine cream cheese, sour cream, and mayonnaise until smooth.
- Fold in caramelized onions and 1 cup of shredded Gruyere cheese, season with black pepper, and mix well.
- Transfer the mixture to a greased baking dish, spreading evenly. Top with the remaining 1/2 cup of Gruyere.
- Bake in a preheated 375°F (190°C) oven for 20-25 minutes until golden and bubbling at the edges.
- Serve warm with toasted baguette slices, crackers, or fresh veggies.
Notes
This dip can be stored in an airtight container in the fridge for up to 3 days. Reheat at 350°F (175°C) for 10-15 minutes until warmed through.
