Ingredients

- 2 cups roasted carrots
- 1/2 cup tahini
- 1/4 cup lemon juice
- 1 garlic clove
- Salt to taste
- Olive oil (for drizzling)
- Pita bread
- Zaatar spice
Instructions
- In a food processor, combine roasted carrots, tahini, lemon juice, garlic, and salt. Blend until smooth, about 1-2 minutes.
- If too thick, drizzle in water while blending until desired consistency is reached.
- Pour into a serving bowl and drizzle with olive oil.
- Cut pita bread into triangles, brush lightly with olive oil, and sprinkle with zaatar spice.
- Preheat oven to 375°F (190°C) and toast pita chips on a baking sheet for about 10 minutes or until golden brown.
- Serve carrot hummus with zaatar pita chips as a snack or appetizer.
Notes
Store leftovers in an airtight container in the refrigerator for up to five days. Hummus can be frozen for up to 3 months.
