Description

This hearty Cattle Drive Casserole comes together in about 30 minutes, made all in one pot for a quick and easy weeknight dinner that your family will love!


Ingredients

  • 1.5 pounds Lean Ground Beef
  • 1 Red Bell Pepper, seeded and chopped
  • 1 Yellow Onion, chopped
  • 1 ounce Taco Seasoning Mix
  • 2 ½ cups Biscuit Mix (like Bisquick)
  • 1 cup Water
  • Cooking Spray
  • ½ cup Sour Cream
  • ½ cup Mayonnaise
  • 4 ounces Diced Green Chiles, drained
  • 1 ½ cups Cheddar Cheese, Fiesta Blend, shredded and divided
  • 1 teaspoon Garlic Powder
  • ½ cup Salsa

Instructions

  1. Preheat the oven to 350°F.
  2. In a large skillet, cook the ground beef over medium-high heat until browned, about 7-10 minutes. Drain any excess fat.
  3. In a medium bowl, combine the biscuit mix and water to prepare the dough. Press the dough into a casserole dish and bake for 5-8 minutes.
  4. Add chopped onion and red bell pepper to the beef mixture and cook for about 4 minutes, until tender.
  5. Stir in the taco seasoning mix and remove from heat.
  6. Layer the beef mixture on top of the biscuit layer.
  7. In another bowl, mix sour cream, mayonnaise, diced green chiles, ¾ cup of cheese, and garlic powder. Spread this mixture over the beef layer.
  8. Dollop salsa over the top and sprinkle the remaining cheese.
  9. Bake for 30 minutes until hot and bubbly.

Notes

This casserole is budget-friendly and can easily accommodate leftover ingredients. It’s a perfect make-ahead meal.
