This hearty Cattle Drive Casserole comes together in about 30 minutes, made all in one pot for a quick and easy weeknight dinner that your family will love!

- 1.5 pounds Lean Ground Beef
- 1 Red Bell Pepper, seeded and chopped
- 1 Yellow Onion, chopped
- 1 ounce Taco Seasoning Mix
- 2 ½ cups Biscuit Mix (like Bisquick)
- 1 cup Water
- Cooking Spray
- ½ cup Sour Cream
- ½ cup Mayonnaise
- 4 ounces Diced Green Chiles, drained
- 1 ½ cups Cheddar Cheese, Fiesta Blend, shredded and divided
- 1 teaspoon Garlic Powder
- ½ cup Salsa
Instructions
- Preheat the oven to 350°F.
- In a large skillet, cook the ground beef over medium-high heat until browned, about 7-10 minutes. Drain any excess fat.
- In a medium bowl, combine the biscuit mix and water to prepare the dough. Press the dough into a casserole dish and bake for 5-8 minutes.
- Add chopped onion and red bell pepper to the beef mixture and cook for about 4 minutes, until tender.
- Stir in the taco seasoning mix and remove from heat.
- Layer the beef mixture on top of the biscuit layer.
- In another bowl, mix sour cream, mayonnaise, diced green chiles, ¾ cup of cheese, and garlic powder. Spread this mixture over the beef layer.
- Dollop salsa over the top and sprinkle the remaining cheese.
- Bake for 30 minutes until hot and bubbly.
Notes
This casserole is budget-friendly and can easily accommodate leftover ingredients. It’s a perfect make-ahead meal.
