Description

These easy Cheeseburger Eggrolls come together in about 30 minutes and are perfect for a quick weeknight meal that your family will love!


Ingredients

  • 1 pound ground beef (or turkey/chicken)
  • 1 cup shredded cheese (Cheddar, mozzarella, or pepper jack)
  • 1/4 cup diced onion (or bell peppers/mushrooms)
  • 2 teaspoons garlic powder
  • Salt and pepper (to taste)
  • 12 pieces of eggroll wrappers
  • Cooking oil for frying
  • Sliced pickles
  • Lettuce
  • Favorite dipping sauces (ketchup, mustard, ranch or spicy mayo)

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes, breaking it up into crumbles.
  2. Add diced onion and cook until translucent, about 2-3 minutes. Stir in garlic powder, salt, and pepper, cooking until fragrant.
  3. Reduce heat to low, add shredded cheese and stir until melted, about 1-2 minutes.
  4. Assemble the eggrolls by placing a wrapper on a flat surface, adding filling, folding, and rolling tightly.
  5. Heat oil in a pot over medium heat. Fry eggrolls until golden brown and crispy, about 3-4 minutes per side.
  6. Serve hot with sliced pickles, lettuce, and dipping sauces.

Notes

These eggrolls can be customized with different meats and cheeses. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
