Ingredients

- 1 pound ground beef (or turkey/chicken)
- 1 cup shredded cheese (Cheddar, mozzarella, or pepper jack)
- 1/4 cup diced onion (or bell peppers/mushrooms)
- 2 teaspoons garlic powder
- Salt and pepper (to taste)
- 12 pieces of eggroll wrappers
- Cooking oil for frying
- Sliced pickles
- Lettuce
- Favorite dipping sauces (ketchup, mustard, ranch or spicy mayo)
Instructions
- In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes, breaking it up into crumbles.
- Add diced onion and cook until translucent, about 2-3 minutes. Stir in garlic powder, salt, and pepper, cooking until fragrant.
- Reduce heat to low, add shredded cheese and stir until melted, about 1-2 minutes.
- Assemble the eggrolls by placing a wrapper on a flat surface, adding filling, folding, and rolling tightly.
- Heat oil in a pot over medium heat. Fry eggrolls until golden brown and crispy, about 3-4 minutes per side.
- Serve hot with sliced pickles, lettuce, and dipping sauces.
Notes
These eggrolls can be customized with different meats and cheeses. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
