Description

A quick and easy one-pot meal featuring tender caramelized onions and boiled eggs, seasoned with Cajun spices and topped with melting cheese.


Ingredients

  • 4 large onions (sweet or yellow)
  • 4 boiled eggs
  • 2 tablespoons Cajun seasoning
  • 1 cup shredded cheese (cheddar or pepper jack)
  • Salt to taste
  • Water for boiling

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Carefully add the onions and boil for 15-20 minutes until tender.
  3. In the last 8-10 minutes of boiling, add the boiled eggs to warm them.
  4. Drain the onions and eggs and place them in a serving dish.
  5. Sprinkle Cajun seasoning over the hot onions and eggs.
  6. Top with shredded cheese and let melt slightly before serving.
