Description

A comforting one-pot casserole that comes together in about 30 minutes, perfect for busy weeknight dinners. This cheesy dish is packed with flavor and customizable to your taste.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1 cup long-grain rice, uncooked
  • 2 cups beef broth
  • 1 (10.75 oz) can cream of mushroom soup
  • 1 cup cheddar cheese, shredded
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large skillet, cook the ground beef, onion, and garlic over medium heat until browned (5-7 minutes). Drain excess fat.
  3. Add rice, beef broth, and cream of mushroom soup to the skillet. Season with salt, pepper, and paprika. Bring to a boil then reduce to simmer for 5 minutes.
  4. Transfer the mixture to the prepared baking dish, cover with aluminum foil, and bake for 25 minutes.
  5. Remove the foil, sprinkle cheddar cheese on top, and bake uncovered for an additional 10-15 minutes until cheese is melted and bubbly.
  6. Garnish with chopped parsley before serving.

Notes

This casserole can be customized with different ingredients and is great for using up leftovers. It can also be frozen before baking for a quick meal later.
