- 1 pound smoked sausage (turkey or beef)
- 4 cups baby potatoes, halved or quartered
- 1 packet ranch seasoning mix
- 1.5 cups shredded cheddar cheese
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 0.5 teaspoon black pepper
- Pinches of salt
- Fresh parsley (for garnish)
- Sour cream (optional, for serving)
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse baby potatoes and cut them in half or quarters.
- Slice the smoked sausage into 1/4-inch thick rounds.
- Mix ranch seasoning, garlic powder, onion powder, and black pepper in a small bowl.
- Toss potatoes with olive oil and half of the ranch seasoning mixture in a large bowl.
- Line a baking sheet with parchment paper or grease it lightly.
- Spread the seasoned potatoes in a single layer on the baking sheet.
- Scatter sliced smoked sausage over the potatoes.
- Roast in the oven for 35-40 minutes, stirring halfway through.
- Once golden and tender, sprinkle shredded cheddar cheese on top.
- Return to the oven for another 5 minutes until cheese is melted.
- Garnish with fresh parsley and serve hot with sour cream if desired.
Notes
Feel free to add leftover veggies or switch the sausage for beans for a meat-free version.
