Description

This quick and easy dish features cheesy ranch potatoes with smoked sausage, making it a perfect weeknight dinner the whole family will love!


Ingredients

Scale
  • 1 pound smoked sausage (turkey or beef)
  • 4 cups baby potatoes, halved or quartered
  • 1 packet ranch seasoning mix
  • 1.5 cups shredded cheddar cheese
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon black pepper
  • Pinches of salt
  • Fresh parsley (for garnish)
  • Sour cream (optional, for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse baby potatoes and cut them in half or quarters.
  3. Slice the smoked sausage into 1/4-inch thick rounds.
  4. Mix ranch seasoning, garlic powder, onion powder, and black pepper in a small bowl.
  5. Toss potatoes with olive oil and half of the ranch seasoning mixture in a large bowl.
  6. Line a baking sheet with parchment paper or grease it lightly.
  7. Spread the seasoned potatoes in a single layer on the baking sheet.
  8. Scatter sliced smoked sausage over the potatoes.
  9. Roast in the oven for 35-40 minutes, stirring halfway through.
  10. Once golden and tender, sprinkle shredded cheddar cheese on top.
  11. Return to the oven for another 5 minutes until cheese is melted.
  12. Garnish with fresh parsley and serve hot with sour cream if desired.

Notes

Feel free to add leftover veggies or switch the sausage for beans for a meat-free version.
