- 2 cups fresh or frozen cherries
- 1 cup granulated sugar
- 1 cup water
- 1/2 lemon, juice
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- 1 teaspoon vanilla extract
Instructions
- In a medium saucepan, combine 2 cups of cherries, 1 cup of sugar, and 1 cup of water over medium heat.
- Turn up the heat and bring the mixture to a boil, stirring occasionally until the sugar dissolves.
- Reduce the heat and let it simmer for about 10 minutes, stirring occasionally.
- In a small bowl, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water to create a slurry.
- Slowly pour the cornstarch mixture into your simmering pot, stirring frequently until thickened.
- Stir in the juice of half a lemon and 1 teaspoon of vanilla extract, cooking for an additional 2 minutes.
- Remove from heat and let it cool slightly before serving over pancakes or other treats.
