A quick and easy Chicken Avocado Melt Sandwich that combines shredded chicken, creamy avocado, and gooey cheese for a delightful weeknight dinner.

- 1 cup cooked chicken, shredded
- 1 ripe avocado, mashed
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 slices of bread
- Salt and pepper to taste
- Butter for grilling
Instructions
- In a bowl, combine the shredded chicken with the mashed avocado. Add salt and pepper to taste.
- Heat a skillet over medium heat and butter one side of each slice of bread.
- On the unbuttered side of each slice, spread the chicken and avocado mixture evenly, then top with a generous amount of shredded cheese.
- Assemble the sandwich with another slice of bread on top, buttered side facing up.
- Grill each sandwich until golden brown on both sides and the cheese is melty, about 3-4 minutes per side.
- Once grilled, slice in half and serve warm.
