Description

This delicious Chicken Biryani comes together in about 40 minutes and is made all in one pot for a quick and easy weeknight meal that your family will love!


Ingredients

Scale
  • 2 cups basmati rice
  • 500 grams chicken, cut into pieces
  • 1 large onion, finely sliced
  • 2 tomatoes, chopped
  • 4 cups water
  • 1 cup yogurt
  • 2 tablespoons ginger-garlic paste
  • 23 green chilies, slit
  • 1/4 cup biryani masala
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup fresh mint leaves, chopped
  • Salt to taste
  • 4 tablespoons oil or ghee
  • Whole spices (like cinnamon stick, cloves, and cardamom)

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain it.
  2. Heat the oil or ghee in a large pot over medium heat. Add the whole spices and sauté for about a minute until fragrant.
  3. Toss in the finely sliced onions and sauté until they’re golden brown and translucent, about 5 minutes.
  4. Mix in the ginger-garlic paste and green chilies, cooking for a couple of minutes until fragrant.
  5. Throw in the chopped tomatoes and cook until they soften, about 5 minutes.
  6. Add the chicken pieces and cook until they’re lightly browned, about 5-7 minutes.
  7. Stir in the yogurt, biryani masala, and a touch of salt. Cook until the chicken is tender and the flavors are well combined, about 5 minutes.
  8. Bring 4 cups of water to a boil in a separate pot. Add the soaked rice, and cook until it’s about 70% done, which takes roughly 10 minutes.
  9. Layer the partially cooked rice over the chicken mixture. Sprinkle on the chopped cilantro and mint leaves. Cover it and cook on low heat for 20-25 minutes.
  10. Serve hot with some refreshing raita.

Notes

This Chicken Biryani is a one-pot wonder that is customizable based on what you have. Leftovers keep for 3-4 days in the fridge and can be frozen for up to 2-3 months.
