Description
This delicious Chicken Biryani comes together in about 40 minutes and is made all in one pot for a quick and easy weeknight meal that your family will love!

- 2 cups basmati rice
- 500 grams chicken, cut into pieces
- 1 large onion, finely sliced
- 2 tomatoes, chopped
- 4 cups water
- 1 cup yogurt
- 2 tablespoons ginger-garlic paste
- 2–3 green chilies, slit
- 1/4 cup biryani masala
- 1/2 cup fresh cilantro, chopped
- 1/2 cup fresh mint leaves, chopped
- Salt to taste
- 4 tablespoons oil or ghee
- Whole spices (like cinnamon stick, cloves, and cardamom)
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain it.
- Heat the oil or ghee in a large pot over medium heat. Add the whole spices and sauté for about a minute until fragrant.
- Toss in the finely sliced onions and sauté until they’re golden brown and translucent, about 5 minutes.
- Mix in the ginger-garlic paste and green chilies, cooking for a couple of minutes until fragrant.
- Throw in the chopped tomatoes and cook until they soften, about 5 minutes.
- Add the chicken pieces and cook until they’re lightly browned, about 5-7 minutes.
- Stir in the yogurt, biryani masala, and a touch of salt. Cook until the chicken is tender and the flavors are well combined, about 5 minutes.
- Bring 4 cups of water to a boil in a separate pot. Add the soaked rice, and cook until it’s about 70% done, which takes roughly 10 minutes.
- Layer the partially cooked rice over the chicken mixture. Sprinkle on the chopped cilantro and mint leaves. Cover it and cook on low heat for 20-25 minutes.
- Serve hot with some refreshing raita.
Notes
This Chicken Biryani is a one-pot wonder that is customizable based on what you have. Leftovers keep for 3-4 days in the fridge and can be frozen for up to 2-3 months.
