- 4 chicken breasts, boneless and skinless
- 2 cups fresh mushrooms, cremini or button
- 1 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Heat 2 tablespoons of olive oil over medium heat in a large skillet.
- Sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
- Toss in the sliced mushrooms and cook until tender, about 5-7 minutes.
- Add the chicken breasts and cook for about 5 minutes per side until golden brown.
- Pour in the chicken broth and cream, stirring to combine. Bring to a simmer and cook for about 15 minutes.
- Season with salt and pepper to taste.
- Remove from heat and garnish with fresh parsley before serving.
