Description

A quick and easy weeknight meal featuring chicken breasts in a rich, creamy mushroom sauce, perfect for cleaning out the fridge.


Ingredients

  • 4 chicken breasts, boneless and skinless
  • 2 cups fresh mushrooms, cremini or button
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat 2 tablespoons of olive oil over medium heat in a large skillet.
  2. Sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
  3. Toss in the sliced mushrooms and cook until tender, about 5-7 minutes.
  4. Add the chicken breasts and cook for about 5 minutes per side until golden brown.
  5. Pour in the chicken broth and cream, stirring to combine. Bring to a simmer and cook for about 15 minutes.
  6. Season with salt and pepper to taste.
  7. Remove from heat and garnish with fresh parsley before serving.
