- 2 oranges (juice and zest)
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 clove garlic, minced
- Salt and pepper to taste

Instructions
- Mix the marinade: In a bowl, combine the juice, zest of the two oranges, soy sauce, minced garlic, and a couple of pinches of salt and pepper. Stir well until everything is blended.
- Marinate the chicken: Place the chicken breasts in this zesty marinade. Let them soak up those flavors for at least 30 minutes or a quick 10-minute soak if short on time.
- Heat the skillet: Grab a skillet and heat the olive oil over medium heat for about 1-2 minutes until shimmering.
- Cook the chicken: Remove the chicken from the marinade and place it in the hot skillet. Cook for about 6-7 minutes on each side or until cooked through (internal temperature should reach 165°F).
- Make the sauce: Once the chicken is done, pour the remaining marinade into the skillet. Bring to a simmer, then reduce the heat and cook for an additional 2 minutes until the sauce thickens slightly.
- Serve it up: Transfer the chicken to a plate and drizzle the orange sauce over the top. Garnish with fresh herbs if desired.
Notes
This dish is versatile; feel free to swap chicken for shrimp or tofu. If you don’t have oranges, lemon or lime juice can be used instead.
