Description

A wholesome, comforting chicken broth soup that’s quick to make and perfect for busy weeknights.


Ingredients

Scale
  • 1.5 lbs bone-in chicken (breasts or thighs, or 1 whole chicken)
  • 1 cup chopped onions
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 2 cloves garlic, minced
  • 8 cups chicken broth or stock
  • Salt, to taste
  • Pepper, to taste
  • Optional: 1 tsp paprika or cumin
  • Optional: splash of coconut milk

Instructions

  1. Prep the chicken by seasoning with salt and pepper if using raw chicken, or shred rotisserie chicken when ready.
  2. Sauté the aromatics: Heat olive oil in a large pot, add chopped onions and cook until translucent. Add garlic and cook until fragrant.
  3. Add the veggies: Stir in the carrots and celery, cooking until softened.
  4. Pour in the broth and add the chicken. Bring to a simmer, reduce heat and cover.
  5. Shred the chicken when cooked (if using raw chicken, cook until fully done). Add back shredded rotisserie chicken to warm.
  6. Season and serve: Taste and adjust seasoning as needed. Garnish and serve hot.

Notes

This soup is customizable with add-ins like beans, corn, noodles, or spices. Enjoy with crusty bread.
