Ingredients

- 1.5 lbs bone-in chicken (breasts or thighs, or 1 whole chicken)
- 1 cup chopped onions
- 1 cup chopped carrots
- 1 cup chopped celery
- 2 cloves garlic, minced
- 8 cups chicken broth or stock
- Salt, to taste
- Pepper, to taste
- Optional: 1 tsp paprika or cumin
- Optional: splash of coconut milk
Instructions
- Prep the chicken by seasoning with salt and pepper if using raw chicken, or shred rotisserie chicken when ready.
- Sauté the aromatics: Heat olive oil in a large pot, add chopped onions and cook until translucent. Add garlic and cook until fragrant.
- Add the veggies: Stir in the carrots and celery, cooking until softened.
- Pour in the broth and add the chicken. Bring to a simmer, reduce heat and cover.
- Shred the chicken when cooked (if using raw chicken, cook until fully done). Add back shredded rotisserie chicken to warm.
- Season and serve: Taste and adjust seasoning as needed. Garnish and serve hot.
Notes
This soup is customizable with add-ins like beans, corn, noodles, or spices. Enjoy with crusty bread.
