Description

A delicious and simple no-bake dessert that features ripe mangoes and creamy goodness, perfect for impressing your family.


Ingredients

Scale
  • 2 yellow and ripe mangoes (makes 1 cup mango puree)
  • ¾ cup boiling water
  • ½ cup coconut milk or half & half
  • 1 tablespoon condensed milk
  • ½ to 1 tablespoon sugar (adjust to taste)
  • 2½ teaspoons gelatin

Instructions

  1. Prep your gelatin by mixing ¾ cup boiling water with 2½ teaspoons of gelatin until fully dissolved.
  2. Peel and pit the mangoes, then blend until smooth.
  3. Combine coconut milk, condensed milk, and sugar in a medium pot, then add the gelatin mixture. Heat gently while stirring until just simmering.
  4. Taste the mixture and adjust the sweetness if needed.
  5. Pour the mixture into bowls and refrigerate to chill, ideally overnight.
  6. Serve with a drizzle of condensed milk and additional mango chunks on top.

Notes

Store leftovers in the refrigerator for about 3-4 days. Best served chilled.
