Ingredients

- 2 yellow and ripe mangoes (makes 1 cup mango puree)
- ¾ cup boiling water
- ½ cup coconut milk or half & half
- 1 tablespoon condensed milk
- ½ to 1 tablespoon sugar (adjust to taste)
- 2½ teaspoons gelatin
Instructions
- Prep your gelatin by mixing ¾ cup boiling water with 2½ teaspoons of gelatin until fully dissolved.
- Peel and pit the mangoes, then blend until smooth.
- Combine coconut milk, condensed milk, and sugar in a medium pot, then add the gelatin mixture. Heat gently while stirring until just simmering.
- Taste the mixture and adjust the sweetness if needed.
- Pour the mixture into bowls and refrigerate to chill, ideally overnight.
- Serve with a drizzle of condensed milk and additional mango chunks on top.
Notes
Store leftovers in the refrigerator for about 3-4 days. Best served chilled.
