Ingredients

  • 2 tbsp sugar (25g)
  • 1 tbsp gelatine (9g)
  • 1 cup water (236ml)
  • ½ cup raw sugar (125g)
  • 5 slices peeled ginger
  • ¼ cup tapioca boba (cooked)
  • ¼ cup red, green, or mung beans (boiled)

Instructions

  1. Prepare the Tofu Pudding: In a large saucepan, combine the soy milk, sugar, and gelatin. Allow to simmer over medium-high heat for about 5 minutes. Keep stirring occasionally until dissolved. Once bubbling, pour into a heat-safe container and refrigerate until set.
  2. Make the Ginger Syrup: In a small saucepan, add the water, raw sugar, and ginger slices. Bring to a simmer over medium heat for about 10-15 minutes until it thickens. Refrigerate until ready to use.
  3. Assembly Time: Prepare boba and beans according to package instructions. Scoop pieces of the tofu pudding into a bowl and top with cooked boba, beans, and ginger syrup.
