Description

Delightful Italian-style Pizzelle Cookies that are perfect for holiday baking and customizable with various flavors.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon vanilla extract
  • 1 tablespoon anise extract (or almond/lemon extract)
  • 1 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. In a large mixing bowl, beat the eggs and granulated sugar until light and fluffy (3-5 minutes).
  2. Add the melted butter, vanilla extract, and anise extract; mix until well combined.
  3. In another bowl, whisk together the flour and baking powder; gradually add to the wet ingredients to form a soft dough.
  4. Preheat the pizzelle iron according to the manufacturer’s instructions.
  5. Drop about a tablespoon of dough onto the center of the iron, close it gently, and bake for 30-60 seconds until golden brown.
  6. Carefully remove the pizzelle and cool on a wire rack.
  7. Dust with powdered sugar before serving.

Notes

These cookies are great with coffee or hot cocoa, and you can freeze them for 2-3 months.
