- 2 cups all-purpose flour
- 3 large eggs
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 tablespoon vanilla extract
- 1 tablespoon anise extract (or almond/lemon extract)
- 1 teaspoon baking powder
- Powdered sugar for dusting
Instructions
- In a large mixing bowl, beat the eggs and granulated sugar until light and fluffy (3-5 minutes).
- Add the melted butter, vanilla extract, and anise extract; mix until well combined.
- In another bowl, whisk together the flour and baking powder; gradually add to the wet ingredients to form a soft dough.
- Preheat the pizzelle iron according to the manufacturer’s instructions.
- Drop about a tablespoon of dough onto the center of the iron, close it gently, and bake for 30-60 seconds until golden brown.
- Carefully remove the pizzelle and cool on a wire rack.
- Dust with powdered sugar before serving.
Notes
These cookies are great with coffee or hot cocoa, and you can freeze them for 2-3 months.
