Description

A warm, fluffy bowl of rice bursting with zesty cilantro and lime flavor, perfect as a side dish for any meal.


Ingredients

Scale
  • 2 cups white rice
  • 4 cups water
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Salt to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium pot, bring 4 cups of water to a vigorous boil, then add the rinsed rice.
  3. Reduce the heat to low, cover the pot, and let it cook for 18-20 minutes until tender and water is absorbed.
  4. Remove from heat and keep covered for about 5 minutes to let it steam.
  5. Fluff the rice with a fork and stir in olive oil, lime juice, chopped cilantro, and salt to taste.
  6. Serve warm as a side dish or as a base for a burrito bowl.
