- 2 cups white rice
- 4 cups water
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 2 tablespoons olive oil
- Salt to taste
Instructions
- Rinse the rice under cold water until the water runs clear to remove excess starch.
- In a medium pot, bring 4 cups of water to a vigorous boil, then add the rinsed rice.
- Reduce the heat to low, cover the pot, and let it cook for 18-20 minutes until tender and water is absorbed.
- Remove from heat and keep covered for about 5 minutes to let it steam.
- Fluff the rice with a fork and stir in olive oil, lime juice, chopped cilantro, and salt to taste.
- Serve warm as a side dish or as a base for a burrito bowl.
