Description

These Cinnamon Roll Cookies come together in about 20 minutes and bake up perfectly golden for a delightful treat your family will love.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • ½ cup brown sugar, packed (for filling)
  • 2 tsp ground cinnamon (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, baking powder, salt, and ground cinnamon until well combined.
  3. Cream together softened butter, granulated sugar, and brown sugar until light and fluffy, then add egg and vanilla.
  4. Gradually mix dry ingredients into the wet mixture until just combined.
  5. Prepare the filling by mixing together brown sugar and ground cinnamon.
  6. Spread half of the dough on parchment paper, sprinkle with filling mixture, and roll tightly. Slice into rounds.
  7. Place cookie rounds on a baking sheet and bake for 10-12 minutes until golden brown.
  8. Let cool on a wire rack and enjoy warm.

Notes

These cookies can be frozen for up to 3 months. Just slice and freeze the dough, then bake from frozen adding a few minutes to bake time.
