Description

A super easy Christmas toffee recipe that’s perfect for holiday gifting and satisfying sweet cravings, made in just 30 minutes.


Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts (almonds, pecans, or hazelnuts)
  • 1 cup semi-sweet chocolate chips
  • Pinches of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Melt 1 cup of unsalted butter in a medium saucepan over medium heat, stirring occasionally.
  3. Add in 2 cups of granulated sugar, 1/2 cup light corn syrup, and a couple pinches of salt, stirring until it begins to bubble.
  4. Continue cooking, stirring frequently, until it reaches a deep amber color (about 10-15 minutes).
  5. Remove from heat and stir in 1 teaspoon of vanilla extract.
  6. Quickly pour the caramel onto the prepared baking sheet and spread it out evenly.
  7. Toast the chopped nuts in the preheated oven for about 5 minutes until golden and fragrant.
  8. While the toffee is still warm, sprinkle 1 cup of chocolate chips over the top and spread the melted chocolate evenly.
  9. Toss the toasted nuts on top and let it cool completely.
  10. Once set, break it into pieces and enjoy.

Notes

This toffee is customizable; feel free to use different types of nuts or add dried fruit. It’s great for gifting and stays fresh in an airtight container for about two weeks.
