A super easy Christmas toffee recipe that’s perfect for holiday gifting and satisfying sweet cravings, made in just 30 minutes.

- 1 cup unsalted butter
- 2 cups granulated sugar
- 1/2 cup light corn syrup
- 1 teaspoon vanilla extract
- 1 cup chopped nuts (almonds, pecans, or hazelnuts)
- 1 cup semi-sweet chocolate chips
- Pinches of salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Melt 1 cup of unsalted butter in a medium saucepan over medium heat, stirring occasionally.
- Add in 2 cups of granulated sugar, 1/2 cup light corn syrup, and a couple pinches of salt, stirring until it begins to bubble.
- Continue cooking, stirring frequently, until it reaches a deep amber color (about 10-15 minutes).
- Remove from heat and stir in 1 teaspoon of vanilla extract.
- Quickly pour the caramel onto the prepared baking sheet and spread it out evenly.
- Toast the chopped nuts in the preheated oven for about 5 minutes until golden and fragrant.
- While the toffee is still warm, sprinkle 1 cup of chocolate chips over the top and spread the melted chocolate evenly.
- Toss the toasted nuts on top and let it cool completely.
- Once set, break it into pieces and enjoy.
Notes
This toffee is customizable; feel free to use different types of nuts or add dried fruit. It’s great for gifting and stays fresh in an airtight container for about two weeks.
