- 1 cup glutinous rice flour
- 2/3 cup full-fat coconut milk
- 1/4 cup granulated sugar
- 1/2 cup mango puree
- 1/2 cup unsweetened shredded desiccated coconut
- 1/4 cup water
- Pinch of salt
Instructions
- Prepare the Dough: In a large mixing bowl, combine 1 cup glutinous rice flour and 2/3 cup coconut milk. Stir well until thick. Add a couple pinches of salt and 1/4 cup granulated sugar; mix until well combined.
- Steam the Mixture: Line a steamer basket with parchment paper and pour in the mixture. Steam over boiling water for about 15-20 minutes until firm to the touch.
- Prepare the Mango Filling: In a blender, puree 1/2 cup of mango until smooth. Optionally, add a dash of lime or lemon juice.
- Assemble the Bliss Balls: Once the dough is steamed and cooled, flatten small pieces in your hand, add a dollop of mango puree, fold, and roll into a ball.
- Coat with Coconut: Spread 1/2 cup shredded coconut on a plate and roll each bliss ball in the coconut.
- Chill and Serve: Refrigerate for about 30 minutes to firm up. Store in an airtight container in the fridge.

These bliss balls are gluten-free and customizable; feel free to add dark chocolate chips or nuts.
