A no-bake, quick and easy treat made with coconut and chocolate, perfect for a healthy snack or dessert.
Ingredients

- 2 cups shredded coconut
- 1/2 cup whey vanilla protein powder (or plant-based protein for vegan)
- 2 tbsp coconut flour (optional for vegan version)
- 1/3 cup coconut oil (melted)
- 1/3 cup full-fat coconut milk
- 2 tbsp maple syrup (optional)
- 3/4 cup dark chocolate (melted)
Instructions
- Mix the shredded coconut, protein powder, coconut flour (if using), melted coconut oil, coconut milk, and maple syrup until well combined.
- Roll the mixture into 1-inch balls.
- Chill the balls in the freezer for about 1 hour to firm up.
- Melt the dark chocolate using a double boiler until smooth.
- Dip each coconut ball in the melted chocolate and place them on a lined baking pan.
- Chill again for about 10 minutes to set the chocolate.
- Store the coconut balls in an airtight container in the fridge for up to a week or freeze for up to 3 months.
Notes
Feel free to customize by adding nuts or dried fruit to the mixture.
