Description

A no-bake, quick and easy treat made with coconut and chocolate, perfect for a healthy snack or dessert.


Ingredients

Scale
  • 2 cups shredded coconut
  • 1/2 cup whey vanilla protein powder (or plant-based protein for vegan)
  • 2 tbsp coconut flour (optional for vegan version)
  • 1/3 cup coconut oil (melted)
  • 1/3 cup full-fat coconut milk
  • 2 tbsp maple syrup (optional)
  • 3/4 cup dark chocolate (melted)

Instructions

  1. Mix the shredded coconut, protein powder, coconut flour (if using), melted coconut oil, coconut milk, and maple syrup until well combined.
  2. Roll the mixture into 1-inch balls.
  3. Chill the balls in the freezer for about 1 hour to firm up.
  4. Melt the dark chocolate using a double boiler until smooth.
  5. Dip each coconut ball in the melted chocolate and place them on a lined baking pan.
  6. Chill again for about 10 minutes to set the chocolate.
  7. Store the coconut balls in an airtight container in the fridge for up to a week or freeze for up to 3 months.

Notes

Feel free to customize by adding nuts or dried fruit to the mixture.
