A quick and easy weeknight dinner made in one pot, perfect for families!
Ingredients

- 4 boneless, skinless chicken breasts
- 1 can black beans, drained and rinsed
- 1 can black-eyed peas, drained and rinsed
- 1 medium onion, diced
- 1 green bell pepper, chopped
- 1 cup corn (canned or frozen)
- 3–4 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, add a splash of olive oil and sauté diced onions and green bell pepper for about 5 minutes until translucent.
- Add minced garlic and cook for 1 minute until fragrant.
- In a large baking dish, combine chicken breasts, black beans, black-eyed peas, corn, and sautéed veggies.
- Sprinkle cumin, chili powder, and salt and pepper over the mixture, then mix well.
- Cover the dish with foil and bake for 25-30 minutes until chicken is cooked through.
- Remove from oven, let rest, and serve hot.

This recipe is highly customizable. Feel free to experiment with different beans and vegetables based on what you have.
