Description

A quick and easy weeknight dinner made in one pot, perfect for families!


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can black-eyed peas, drained and rinsed
  • 1 medium onion, diced
  • 1 green bell pepper, chopped
  • 1 cup corn (canned or frozen)
  • 34 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add a splash of olive oil and sauté diced onions and green bell pepper for about 5 minutes until translucent.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. In a large baking dish, combine chicken breasts, black beans, black-eyed peas, corn, and sautéed veggies.
  5. Sprinkle cumin, chili powder, and salt and pepper over the mixture, then mix well.
  6. Cover the dish with foil and bake for 25-30 minutes until chicken is cooked through.
  7. Remove from oven, let rest, and serve hot.

Notes

This recipe is highly customizable. Feel free to experiment with different beans and vegetables based on what you have.
