Description

Ingredients

  • ½ cup orange juice
  • ¼ cup vegetable oil
  • 1 large egg
  • 1 tablespoon orange zest
  • 1 cup fresh cranberries
  • Nuts (optional, e.g., walnuts or pecans)
  • Chocolate chips (optional)
  • Dried fruits (optional, e.g., raisins or apricots)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well-mixed.
  3. In another bowl, combine the orange juice, vegetable oil, egg, and orange zest. Stir until mixed well.
  4. Pour the wet ingredients into the dry ingredients, then mix until just combined.
  5. Gently fold in the fresh cranberries.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
