- 1 lb chicken breast (boneless, skinless, cubed)
- 1 tablespoon olive oil
- 1 small onion (diced)
- 1 green bell pepper (diced)
- 3 cloves garlic (minced)
- 1 tablespoon Cajun seasoning
- ½ teaspoon smoked paprika
- ½ teaspoon onion powder
- ¼ teaspoon cayenne pepper (optional)
- A couple pinches of salt and pepper
- 1 cup long-grain white rice
- 2 cups chicken broth
- 10 oz diced tomatoes with green chilies (undrained)
- 4 oz cream cheese (cubed)
- 8 oz Velveeta cheese (cubed)
- Chopped fresh parsley or green onions (for garnish)
Instructions
- Heat the olive oil over medium heat, then add the cubed chicken along with salt, pepper, Cajun seasoning, smoked paprika, onion powder, and cayenne pepper. Cook until browned and cooked through, about 5-7 minutes.
- Add the diced onion, green bell pepper, and minced garlic. Cook for another 3-4 minutes until the veggies are tender.
- Stir in the rice, diced tomatoes, and chicken broth. Bring to a simmer, reduce heat to low, cover, and cook for 18-20 minutes until rice is tender.
- Remove from heat and stir in the cream cheese and Velveeta until melted and creamy.
- Garnish with parsley or green onions and serve hot.
Notes
This dish is customizable; feel free to use leftover veggies or proteins. Store leftovers in an airtight container for up to 4 days.
