Instructions
- In a pot, bring the vegetable broth or water to a boil over medium-high heat, about 5 minutes.
- Gradually whisk in the polenta, reducing the heat to low, stirring gently to avoid lumps.
- Continue whisking occasionally for about 20-30 minutes until it thickens to a creamy texture.
- Meanwhile, in a skillet, melt the butter over medium heat.
- Toss in the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the sliced mushrooms and cook until softened and browned, about 5-7 minutes.
- Season with salt and pepper to taste.
- Serve the creamy polenta topped with sautéed mushrooms, and optional Parmesan cheese.
